Menu (3)

Last week's menu was mostly a success.

The Italian Parmesan Baked Chicken and the Tuna Pasta Salad were both delicious and surprisingly easy.

The Roasted Beet and Feta Salad likely would have been tasty if I had cooked the beets long enough. I'll know that for next time. Also, I didn't make the Cabbage Colcannon because we had corn on the cob and salad as side dishes instead.

Peter made extra of both the slow cooker recipes — Slow Cooker Spaghetti and Slow Cooker Pea Soup — to freeze for when the baby is born.

We have leftover zucchini and cabbage to use up.

So here is what we're going to eat this week:

Saturday:
Barbecued pork
Barbecued vegetables
Corn on the cob

Sunday:
Slow Cooker Chili
Buns

Monday:
Tacos

Tuesday:
Bacon and Cabbage Soup
Buns

Wednesday:
Corn on the cob

Thursday:
Salad

Friday:
Leftovers
